Strawberry ice cream from the top

1. Strawberry Basil

  • 2 cups fresh strawberries
  • 1 cup coconut milk
  • 2 tbsp honey
  • Handful of fresh basil

Blend, freeze, and churn. The basil adds an herbal twist that’s refreshing and unique.

2. Chocolate Avocado Mousse Ice Cream

  • 2 ripe avocados
  • ½ cup cocoa powder
  • ½ cup maple syrup
  • 1 cup almond milk

3. Classic Vanilla Custard

  • 2 cups whole milk
  • 1 cup cream
  • 4 egg yolks
  • ½ cup sugar (or to taste)
  • 1 vanilla bean or 2 tsp extract

Heat the milk until there are little bubbles around the edge of the pan. 

Meanwhile, separate the eggs, freezing the egg whites in an ice cube tray for other projects. Whisk the egg yolks and the sugar in a separate bowl. 

Once the milk is at heat, pour about a ¼ cup of it into the egg yolks, continuing to whisk. This warms the yolk mixture so that it doesn’t cook. It doesn’t take much. Pour all of the eggs into the milk mixture. 

Mix in the vanilla flavoring and place the mixture in the refrigerator to chill it. 

When you’re ready, put the resulting mixture into an ice cream maker and enjoy the result!

4. High-Protein, Dairy-Free Banana Base 

  • 2 ripe bananas, frozen
  • ¼ c nut milk (here is how to make your own!)
  • Vanilla extract to taste

Blend all ingredients in a blender and blend until it is the consistency of ice cream.
